In blender, blend water with potato starch and kudzu, then pour ⅔ of the way to top of silicone molds, leaving empty molds in checkerboard pattern to reduce spillover.

Place in combi at 160°C for 50 minutes with fan on 4, then reduce heat to 120°C for 60 minutes with no fan, remove from molds and cool to room temperature, then reserve for service.
