Combine sugar with water in saucepan, do not stir, caramelize sugar over medium-low heat to dark caramel (about 190°C), then remove from heat, add sunflower seeds, stir to mix evenly.

Pour mixture on Silpat lined baking tray with wire rack underneath to cool to room temperature.

Transfer sunflower seed praline to Robot Coupe, add pumpkin seed oil, blend to thick paste, taste and adjust as needed.
