Combine all ingredients in 1/6 pan, then blend with hand blender until smooth, wrap with plastic wrap.

Place 1/6 pan in combi at 100% steam, 100°C for 40 minutes, then ice bath, remove from 1/6 pan, transfer to cooler on tray, allow to dry 3–4 days before grating.
