Canvas opened in April 2017 with an à la carte menu. Our first tasting menus, six and nine courses, followed in early 2018. From 2018 to 2022, menus evolved seasonally, shifting through each of Thailand’s three commonly recognized seasons: Cool, Rainy, and Hot. This was a period defined by daily market visits, deep product research, intensive sourcing, and creative development, learning, tasting, and documenting the seasonality of Thai ingredients as we went.
