Whisk agar into boiling water in saucepan for 3 minutes, remove from heat, allow to cool slightly then add dried chrysanthemum flower, strain, add honey, reserve in flatbox to cool and allow gel to stabilize.

Cut gel into cubes, blend over high speed, pass through chinois and reserve for service.
